Cannabis-Infused Trail Mix

Cannabis-Infused Trail Mix

Prep Time: 5 minYield 12-16 servings
It's not hiking without trail mix. Amp up yours with a dose of Encore or similar cannabis chocolates! Chopping up into pieces helps you enjoy the chocolate that much longer. And, because we're not monsters, we recommend adding additional unmedicated chocolate candies. Ingredients:
  1. 1 c of your favorite nuts, or 1/2 c peanut butter chips
  2. 1/2 c seeds, like sunflower or pumpkin seeds
  3. 1 c dried fruit, we like raisins, cranberries, chopped apricots, apple slices, or banana chips
  4. 1/2 c granola, Cheerios, or pretzels.
  5. 1/4 c chocolate chips or candy
  6. 1/4 c peanut butter chips (if you're not using nuts)
  7. 1 Encore Chocolate or similar per serving (or more, depending on your desired dose)

Directions:
  1. Mix all of your dry ingredients together, except the Encore or similar cannabis chocolates.
  2. Divide the trail mix into 12-16 servings.
  3. Add your desired dose of cannabis chocolate to each serving.
  4. Enjoy while hiking or camping!

Cannabis-Infused Coconut Chocolate Chip Granola Bars

Cannabis-Infused Granola Bars

Prep Time: 45 minYield 12-16 bars
One of the best snacks for hiking and camping, outside of loose-y goose-y trail mix? Granola bars. Amplify the treat with an added dose of THC using cannabutter. Cannabutter is a great option for crafting these delightful treats as you can tailor the dose to your preference. Ingredients:
  • 1/4 c cannabutter
  • 2 cups rolled oats
  • 1/2 c shredded coconut
  • 1/2 c chocolate chips
  • 1/2 c of your favorite nuts, chopped
  • 1/4 c honey or maple syrup
  • 1/4 c brown sugar
  • 1/4 c peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Directions:
  1. Preheat your oven to 350°F (175°C).
  2. Line the baking dish with parchment paper, leaving some overhang for easy removal.
  3. In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips, and chopped nuts. If you’re adding optional seeds, mix them in as well.
  4. In a small saucepan over low heat, combine the cannabis-infused coconut oil, honey (or maple syrup), brown sugar, and peanut butter. Cook, stirring constantly, until the mixture is well combined and smooth.
  5. Remove from heat and stir in the vanilla extract and salt.
  6. Pour the warm liquid mixture over the dry ingredients in the bowl. Stir with a wooden spoon until all the ingredients are evenly coated.
  7. Transfer the granola mixture to the prepared baking dish. Press it down firmly to compact the mixture (this helps the bars hold together after baking).
  8. Bake in the preheated oven for 20-25 minutes or until the edges begin to turn golden brown.
  9. Remove from the oven and let cool completely in the pan on a wire rack. Cooling in the refrigerator for about an hour can make the bars easier to slice.
  10. Once cooled, lift the parchment paper to remove the granola block from the pan and cut into bars.
  11. Store the bars in an airtight container for your hiking or camping adventure!

Cannabis-Infused S'mores

Cannabis-Infused S'mores

Prep Time: 5 minutesYield 1 s'more
The best part of camping is obviously s'mores. Amp up yours with a dose of THC using Encore Chocolates or similar! Milk chocolate, dark chocolate, pick your flavor and get ready for the best s'more – just don't forget your roasting sticks! Ingredients:
  • Graham crackers
  • Marshmallows
  • Encore or other cannabis-infused chocolate

Directions:
  1. Put your medicated chocolate between two graham crackers
  2. Place your marshmallow on your roasting stick to your desired char
  3. Pull your marshmallow off between your chocolate/graham cracker combo and enjoy!
