Cooking With Cannabis

If you’ve found yourself curious about the process of making your own edibles, look no further! In this post we’ll go over the ins and outs of cooking with cannabis, right down to calculating the dosing. Let’s get started!

Banana Bread with Cannabis Flower

What you will need:

  • 7g coarsely ground cannabis flower or 2 grams of concentrate
  • 1 tablespoon sunflower lecithin (optional)
  • Parchment paper
  • 1 cup high fat oil (unsalted butter or coconut oil)
  • Baking sheet
  • Slow Cooker or double boiler
  • Funnel
  • Cheesecloth

Now that you have your ingredients and tools, let’s convert those cannabinoids using decarboxylation!

Decarboxylating your cannabis:

  1. Preheat oven 235°F
  2. Grind and break down your cannabis bud and spread it over parchment paper on your baking sheet.

(If you opted to use concentrate, place your concentrates in a small oven-ready container made of glass or food grade silicone.)

  1. Bake for approximately 30 minutes.
  2. For flower, gently mix the buds every 10 minutes with a light shake of the baking sheet.

You now have decarboxylated cannabis!

Directions for slow cooker

  1. Set your slow cooker on low, keeping the temperature around 160°F.
  2. Add the 1 cup of high fat oil, ground cannabis, and sunflower lecithin (optional). Stir occasionally.
  3. After about 3-4 hours, turn off the slow cooker and wait for the oil to cool.
  4. Proceed to straining instructions below if using ground flower.

Directions for double boiler

  1. Add 1 cup of high fat oil into a double boiler. Simmer on low and let the butter melt.
  2. As oil heats, add in your cannabis product and sunflower lecithin (optional).
  3. Maintain low heat (above 160°F but never exceeding 200°F) and simmer for 2-3 hours, stirring occasionally. *Never let the mixture come to a full boil.
  4. Proceed to straining instructions below if using ground flower.

Straining your infused oil (flower only)

  1. Set a funnel on top of a jar and line it with a cheesecloth.
  2. Once the oil has cooled down slightly, pour it over the cheesecloth funnel and allow it to strain freely.
  3. Place the oil in the refrigerator to cool.

  • Its best to use clarified butter, this removes the milk solids and water from the butter, resulting in a better infusion and overall edible experience.
  • If your infused oil becomes solid after infusion, melt it and stir before putting into your dish.
  • Remember to keep the internal temperature of whatever you are making with your infused oil below 300°F in order to keep the THC from burning off.

Calculating THC Content

THCa x .877 + THC = Total THC per gram

Total THC per gram x Total Infused Weight = Total THC per batch

Total THC per batch / # of items = dosage per item
